Materials:
Blades of knives are made of different types of materials; High-carbon stainless alloys, carbon steel, ceramic, and stainless steel. There are pros and cons for each.
Carbon steel:
Pros: Easy to sharp and hold, longer edge than stainless

Ceramic:
Pros: No rusting, razor sharp edge

As with other kitchen utensils, any weld or joint makes a knife weak. Full tang (single piece) or three quarter knives are much stronger and durable than knives made by welding/joining different material (eg plastic/wood and steel etc)

While wooden handles are more comfortable than plastic or steel handles, they need more care and maintenance as compared to other materials. Also, over longer use wood becomes soft and rot easily whereas stainless steel and other composite materials tend to last much longer.
